Ok, this probabily falls in the catagory of I can't believe he asked that. I'm making a Bierre Blanc sauce tomorrow and the receipe calls for 2 tsps of heavy cream (HC). The cream is used to stabilize the emulsion. Rather than buying a pint of HC only to throw away most of it, can I just put in a few squirts of Ready Whip? I'm thinking a 1/4 cup is equip to the 2 tsp. Thoughts?

Why not just freeze the unused portion of the heavy cream in an ice cube tray and then put the cubes into a freezer zip loc? It won't be good for whipping but will be good for cooking. I've done that and it works just fine. That way you'll always have heavy cream on hand.

Hi Dennis, I think you'd be best following Leni's suggestion. I wouldn't use Reddi Whip for a beurre blanc. First, it's sweetened, and second, I'm wondering about its stabilizing ability.

You can easily find heavy cream in 8-oz. containers...might be a little better than a pint.

It was a nice evening. Main course was some pan seared scallops over a bed of spinach with cous-cous. I nixed the bierre blanc completely and seasoned the scallops with lemon zest, pepper flakes and paprika before searing. (Found a Rachel Ray )))))) on the net). After I fried up a couple of pieces of bacon, I warmed the spinach in a tablespoon of the rendered fat and finished it with some balsamic vinegar and the chopped up bacon pieces. The cous-cous was not a great accompaniment because the plate needed more "crunch".

Thanks again to all those who have helped now and in the past. I love this site!

After the couscous finishes cooking, try adding in one or more of the following:
chopped raw red bell pepper, chopped raw jicama, chopped celery, grated carrot, sliced spring onion, chopped roma tomatoes, small broccoli flowerettes, small cauliflower flowerettes, chopped apple, canned water chestnuts, toasted sesame seeds and on and on.
